As part of our partnership with The Lo & Behold Group, Chef Mirko Febbrile mentored our Diploma students from Restaurant & Culinary Operations, Hotel & Hospitality Management, and Customer Experience Management. This collaboration between The Lo & Behold Group and the School of Hospitality aims to help students shift beyond the basics to develop intermediate and advanced restaurant entrepreneurship skills.
From 3 to 14 April 2023, our nine student interns from 9th ave. Training Restaurant learnt first-hand about menu conceptualisation, costing, and marketing. Under Chef Mirko’s guidance, our students trained on how to prepare a delectable selection of all-time Italian favourites and classics.
Finally, the course culminated in an exciting 3-day stint, where our students executed and served their new creations from Chef Mirko’s promotional menu at 9th ave. Training Restaurant. The knowledge and skills garnered will also be transferred to our existing culinary module, Restaurant and Culinary Operations II.
About Chef Mirko Febbrile
From fashion to art and music, Mirko often looks beyond ingredients as his inspiration. He also brings maturity beyond his years, having started from humble beginnings at McDonald’s before working his way into the Michelin world with Braci. Along the way, he has discovered the value of inclusivity and positive kitchen culture, as well as a guest-centric approach to his cuisine. Most recently, he served up gourmet homemade burrata gelato brioche sandwiches in the CBD. The two-day event was meant to create buzz for Fico (the Italian word for fig), a new Italian restaurant by Mirko and The Lo & Behold Group at East Coast Park.
