This module provides an introduction to the commercialization of new products or ingredients in the food industry, through knowledge of intellectual property (IP), marketing strategies and advanced technologies. Through this module, students will attain knowledge of the characteristics of various food ingredients and additives, as well as the problems associated with the use of food additives. This provides an overview on factors contributing to the quality and value of food products. Students will gain a practical approach in new product development and recognize the importance of sustainable innovation and production management of food, including agricultural produce.
