Basic Chocolate Production Techniques

Got an insatiably sweet tooth and a weakness for all things cacao?

This fun-packed introduction to the art of chocolate making will equip you with the relevant knowledge and skills for basic chocolate making and production. With tastings, demonstrations, and lots of opportunities for hands-on activity, your sweet tooth and inner chocolatier will never lack inspiration. You will also become familiar with the ingredients for chocolate making, and be introduced to using both traditional and modern techniques for chocolate tempering.

Learning Objectives

By the end of the course, participants will be able to:

  • understand the composition of chocolate
  • demonstrate correct chocolate melting techniques
  • distinguish between traditional and modern techniques of chocolate tempering
  • differentiate between the methods used for making chocolate Chantilly and Nama chocolate
  • identify the ingredients used and cooking techniques applied
  • appreciate the art of chocolate decorations for plated desserts


Who Should Attend?

Food & Beverage (F&B) managers and operators, F&B entrepreneurs, entry-level dessert/pastry chef assistants, and individuals without prior experience seeking employment in the F&B industry.

Chocoholics and dessert enthusiasts who wish to appreciate the art of chocolate making, as well as home-bakers seeking new ideas or skills in dessert plating and decoration.

Entry Requirement

This appreciation workshop is suitable for participants with little or no experience in the techniques of chocolate making and the appreciation of chocolate as dessert plating decorations.

This workshop is suitable for participants aged 15 and above. Participants below the age of 21 have to produce written consent from their parents or legal guardians.

Participants are expected to follow the trainer’s instructions and exercise caution when handling cooking equipment, tools, and heated surfaces.

Certification

Participants will be awarded the Certificate of Attendance by Republic Polytechnic upon meeting 80% of the attendance requirement.
